Bitter Root Salad (Sadao Salad)


This menu is the favorite food for Khmer people. The people cooked it on summer. You can find Bitter Root in Cambodia on January-May. it not expensive. Bitter root salad easy to cook and delicious. Let’s do together!

  • 2 pkg Sadao (Bitter Root)
  • 2 small-medium cat fish
  • 1/2 lb pork belly
  • 1 large shallot
  • 3 clove of garlic
  • 5 red chilies
  • 2 tbsp sugar
  • 1 tbsp salt
  • 2 tbsp peanut (Optional)
  • 2 tbsp fish sauce 
  • 100 g tamarind pulp 
  • 1/2 cup hot water to melt tamarind pulp
  • 3 cucumbers
  • 1 small-medium white radish
  • 1 tomato
  1. Chop the shallot, garlic and chilies.
  2. Squeeze out the tamarind pulp.
  3. Add fish sauce and sugar.
  4. Take out the seeds and excess pulp.
  5. Add shallots, garlic and chilies into tamarind pulp and mix it well.
  6. Blanch the bitter root for 3 minutes (you do not have to run it under cold water).
  7. We are only going to use the outer part of the cucumber using the middle of the cucumber makes the salad watery.
  8. Finely slice the cucumber, radish and tomato (squeeze the seeds out to make ales watery salad).
  9. Mix and squeeze the salt into the radish until soft. Once soft wash out the salt in cold water. 
  10. Once cooled, pull the bitter root and keep the small seeds.
  11. Blanch the pork for 10-15 minutes. Get rid of the excess fat, slice thinly.
  12. Toast the fish on high for 15-20 minutes then debone the fish.
  13. Add fish, meat, sauce and peanut mix it. Add bitter root and radish. Mix well. Finely add cucumber and tomato. Mix well.
  14. Transfer to a large plate. Ready to serve.
